Good luck on your new venture. I never got into canning. It's so labor intensive! Also, pressure cookers kinda scare me. 🙃

Honestly, I was super scared at first as well, but after doing it, it's not scary at all!!! Noisy as all get out, but not scary!!

I scared myself when I had a small pressure cooker for regular cooking when I was a young mom. Taking care of 2 toddlers and trying to have a homecooked meal on the table when DH got home from working refinery construction, I hastily put a chicken in WITHOUT water. I thought I was blowing up the house! I never tried using a pressure cooker again. I remember my mom canning all kinds of stuff, but so much work! And yes, it's noisey!

Oh my goodness!!! I'm so sorry you experienced that!!!! I have an instant pot, so I am relatively experienced, and I watched my GMA can, and my mom uses a pressure cooker when making my favorite meal, beef stroganoff. So while a little wary about pressure canning, I felt confident enough to try it!

@Butterfrei , I never heard of making stroganoff in a pressure cooker. I make it often during cold-weather months, but in a stove-top pan. Stroganoff became very popular back in the '50s-'60s, but few people still make it today.

That's awesome!! Did you make it by boiling the bones and skin? I do that every Thanksgiving with the turkey carcass and make a nice rich stock. I then make a good turkey soup with it.

We usually make beef stroganoff every year for Valentine's Day. Serve it with a side of peas and instead of over noodles those crispy shoestring potato sticks, which is the traditional way it is served in Russia.
